High Protein Quick and Easy Granola

This high protein stovetop granola is so quick to whip up you’ll be impressing your brunch guests in no time. Making your own granola is not only satisfying but it also makes you feel as if you have your sh*t together. This recipe also has a surprise element of chickpea flour. It adds that extra level of richness but also amps up the protein in this granola.

Ingredients: 

  • 3 tablespoons of coconut oil
  • 1 cup of gluten-free oats
  • ¼ cup of mixed seeds
  • ½ cup of coconut flakes
  • 1 tablespoon of chia seeds
  • 2 tablespoons of cacao
  • ¼ cup of chopped walnuts (or any nut)
  • 1 teaspoon of cinnamon
  • A pinch of salt
  • 2 tablespoons of maple syrup
  • 1 heaped tablespoon of Planet Organic chickpea flour (optional)

Method:

In a large saucepan, heat up your coconut oil on medium heat. Add your oats, mixed seeds, coconut flakes, chia seeds, walnuts, cacao and cinnamon. Cook this mixture until the seeds start to lightly toast and the mixture starts to get crunchy. Add in your maple syrup and chickpea flour with a pinch of salt and toss the mixture over high heat for about one minute. 

Once done, remove from the stovetop and leave to cool. Use to top my green glow smoothie bowl, oatmeal or my home-made coconut yoghurt!
