These vegan and gluten-free rocky road brownies will take your Valentine’s Day dessert game from 0 to 100 real quick. Firstly, nothing says “I love you” like baking for your loved one. Secondly, nothing screams love and Valentine’s day like chocolate. These brownies are so oozy and sensationally chocolatey, they’ll make anyone fall in love (with you, or them.) Plus, they’re really easy to make.
Ingredients:
For the brownies:
- 1 cup cacao
- ½ cup Dove’s Farm Self-Raising Flour
- ½ a cup of coconut sugar
- 1 tsp baking powder
- ½ tsp baking soda
- A good pinch of salt
- 1 ¼ cup of Plenish almond milk
- ¼ cup of coconut oil
- 1 heaped tablespoon of almond butter – I used the Cacao and Almond butter from Planet Organic
- 1 tsp of vanilla essence
Topping:
- ½ cup of roasted almonds
- 1 slab of chocolate – I used the HU Kitchen Salty Dark Chocolate
- 9 vegan marshmallows – I used the Not Guilty Sweet Co Marilyn Marshmallows
Method:
Set your oven to 180ºC and line a brownie tin with baking paper. In a large bowl, sieve your dry ingredients. In a smaller bowl, whisk together the almond milk, coconut oil, almond butter and vanilla essence. Combine the wet and dry ingredients well and bake for 20 minutes.
In the meantime, chop your almonds and chocolate. You want there to be nice chunky bits. Once the brownies have been in the oven for 20 mins, top with the almonds and chocolate. Add 3 rows of 3 marshmallows and bake for a further 10 minutes. Once cooked, remove from the oven. If the marshmallows have puffed up a bit, you can flatten them with the back of a spoon. Wait for the brownies to cool completely before tucking in.
Enjoy with some vegan vanilla ice-cream or just as they are!
